What is the largest container can you use with this?

There really is no limit, the larger the container, the longer the water takes to heat up.

Is this device mostly for meat?

Yes, sous vide is mostly for meat. It does not reach the rolling boil needed to cook pasta, nor the high temps of an oven (for casseroles).
